Tikka Masala sauce

Tikka Masala
Tikka Masala Curry in less than 20 minutes.
Fry some onion till golden brown then add chicken or lamb and the required amount of Tikka paste to suit your pallet. Simmer in some stock for 5-10 minutes then add some natural yoghurt or crème fraiche.
Garnish with freshly chopped coriander and serve with rice and nan bread, and enjoy.
As a marinade, simply coat your choice of meat, cover and leave in the fridge for a minimum of 6 hours.


Harrisa Paste sauce

Harrisa Chicken with herbed couscous, low fat and ready in 20 mins.
2 tbsp of Harrisa paste, juice of half a lemon, 1tbsp of fresh coriander and some sea salt – rub this in to 4 skinless/boneless chicken thighs, lay them on baking sheet and grill for 4-5 mins on either side till cooked through.
Half a cup of couscous, to this add 1 full cup of boiling water, cover and leave for 5 mins then add a small bunch of chopped mint, 200g tin of butter beans(rinsed and drained) the other half of the juice from the lemon and salt and pepper ……….. Delicious.

Sweet Chilli sauce
Sweet Chilli Sauce
Uses for this popular sauce are endless - Stir Fry’s, Dipping sauce, Marinades - great with chicken, pork and prawns. 
Sweet Chilli Prawns - Serves 6
36 large raw prawns
1 Pot sweet chilli sauce
2 limes, juiced
4 tablespoons light soy sauce
1 tablespoon sesame oil
In a small bowl whisk together the sweet chilli sauce, lime juice, soy sauce and sesame oil. Toss in the prawns (do not leave in the marinade for too long as the lime juice will start to cook the prawns) grill briefly turning once. As soon as the prawns go from grey to pink on both sides, remove them from the heat. Serve immediately with warm crusty bread along with the leftover marinade for dipping.

All the above Pesto’s are brilliant on there own or simply served with cooked pasta, or try mixing 2 tbsp of pesto with 1 tsp of mayonnaise to make delicious sandwich fillings with prawns and chicken.
Thinned down with a little more olive oil they also make great salad dressings.
